I'm also attempting gluten free stuffing. Did you know that Franz Bakery (in Spenard) also distributes GF bread? And you can get it in two-packs at Costco! I like it better than Udi's myself. I'm thinking of trying a cornbread stuffing, maybe....Let me know how your project turns out!

Xanthan gum is actually in the natural foods section of Fred's. Not cheap ($15 bucks or so), but it lasts. You can find it (more expensive) at Natural Pantry as well.

You can find xantham gum at Natural Pantry in the baking section. Nice jam porn! Lol looks like an awesome little treat.
I am trying my hand at Gluton free stuffing this week. My daughter is Gluten intolerant. Carr's has Udi's bread (unfrozen!) in the bread dept. found the recipe at wholeFoods.com
It is unfortunate that it is so expensive to eat healthy.

This reminds me of a wonderful pastry I had in Homer at Two Sisters. I'd given up on ever having anything that fabulous again since going GF, but maybe there's hope! Thanks for posting this.
